Born in Cascais, José Avillez always had a deep respect for food and tradition. But it was a life-changing internship at El Bulli under Ferran Adrià — the legendary pioneer of molecular cuisine — that pushed him toward innovation and experimentation. With this experience, Avillez returned to Portugal determined to revolutionize the way Portuguese cuisine was seen and experienced.
In 2012, he took over Belcanto, a historic restaurant in the heart of Lisbon’s Chiado district, and gave it a bold new identity: elegant, intimate, and utterly avant-garde. Within one year, Belcanto received its first Michelin star. The second followed shortly after, making it the first Lisbon-based restaurant to earn two Michelin stars.
